If your recipe was written for a fan oven and yours is conventional, add 20 °C instead: 196.7 °C (386 °F).

Timing, not just heat

Fan ovens also finish sooner. Start checking about 10% early — a 40-minute bake wants a look at 36 minutes.

The three conventions disagree by 6.1 °C at this temperature. The UK −20 °C rule is the one printed on recipe charts; the 10% rule lands close to it at normal baking heats and further away at the extremes.

Cross-checked against two independent routes

Gas-mark table audit: all 10 rungs from gas 1 to gas 10 were re-derived from °F = 250 + 25 × G when this page rendered, and every one matched the published chart. Dial figures round to the nearest 10 °C and 25 °F, which is how domestic oven dials are actually marked.

How it works

Two very different kinds of number sit inside an oven conversion, and most charts blur them together. Separating them is what this tool does.

The arithmetic is exact. Fahrenheit and Celsius are related by a definition, not a measurement:

  • °C = (°F − 32) × 5/9
  • °F = °C × 9/5 + 32
  • K = °C + 273.15

The 32 is where water freezes on the Fahrenheit scale; the 5/9 is because 180 Fahrenheit degrees cover the same span as 100 Celsius degrees. Since the 2019 SI redefinition fixed the Boltzmann constant, the kelvin and the degree Celsius are exact quantities, so no rounding enters anywhere. The converter runs this conversion twice by two different routes — the direct formula and a detour through kelvin — and reports whether they agree, which is a live check that nothing in the code has drifted.

The gas mark scale is a ladder. From mark 1 upwards it obeys a closed form: °F = 250 + 25 × G. Mark 1 is 275 °F, and every mark adds another 25 °F, so mark 4 is 350 °F and mark 9 is 475 °F. This page re-derives all 10 whole rungs from that formula every time it renders and compares them against the published chart, so a typo in the table cannot reach you unnoticed. The two sub-marks are the exception: ¼ and ½ are fixed at 225 °F and 250 °F by convention, and the formula would put ¼ at 256.25 °F, so they are read from the table rather than calculated.

The Celsius column of every chart is a convention. Gas mark 4 is exactly 350 °F, but its printed Celsius is 180 °C where the arithmetic gives 176.7 °C. That is not sloppiness — Celsius oven dials are marked every 10 °C, so a chart has to give you a number you can select. Auditing the chart against plain nearest-10 rounding shows 11 of 12 rows follow it exactly. The single exception is gas mark 9, printed as 240 °C where 475 °F converts to 246.1 °C — a gap of 6.1 °C that the chart has simply carried for decades.

The fan adjustment is three conventions, not one. A fan strips away the still layer of air that insulates food, so the same dial reading browns faster. The UK, Ireland and Australia subtract 20 °C. US convection guidance subtracts 25 °F, which is only about 14 °C. A third rule cuts 10% off the Celsius figure. The converter shows all three with the spread between them rather than picking one silently, and defaults to the 20 °C rule because that is the one printed on recipe charts. Fan ovens also finish sooner, so start checking about 10% before the stated time.

Finally, every result carries a dial figure: the conversion rounded to the nearest 10 °C or 25 °F, because those are the increments domestic oven dials are marked in. Knowing that 180 °C is 356 °F is arithmetic; knowing to set the dial to 350 °F is the answer you came for.

Worked examples

Gas mark 4 · Moderate

A US recipe says 350 °F, and you have a UK oven

  1. °C = (350 − 32) × 5/9 = 318 × 5/9 = 176.6667 °C
  2. Check via kelvin: (350 + 459.67) × 5/9 − 273.15 = 176.6667 °C ✓
  3. Gas = (350 − 250) / 25 = 4.00 — exactly on a published rung
  4. Chart row: 180 °C / 160 °C fan / 350 °F / gas 4
  5. Fan (UK −20 °C): 176.6667 − 20 = 156.7 °C = 314.0 °F
  6. Dial: nearest 10 °C = 180 °C — set 180 °C, or 160 °C fan

The 6-degree gap nobody explains

A UK recipe says 180 °C, and you have a US oven

  1. °F = 180 × 9/5 + 32 = 324 + 32 = 356 °F — not 350
  2. Gas = (356 − 250) / 25 = 4.24 → nearest rung is gas 4
  3. Why the chart says 350: dials are marked every 25 °F,
  4. and 356 / 25 = 14.24, which rounds to 14 × 25 = 350 °F
  5. Fan (UK −20 °C): 160 °C = 320 °F
  6. Set 350 °F. The 6 °F you lose is smaller than your oven's own drift.

Where the gas formula breaks down

Edge case: a recipe says gas mark ¼

  1. Formula 250 + 25 × 0.25 = 256.25 °F — wrong, and this is the point
  2. Published table: gas ¼ = 225 °F (the sub-marks are fixed, not derived)
  3. °C = (225 − 32) × 5/9 = 193 × 5/9 = 107.2222 °C
  4. Chart prints 110 °C — nearest 10 °C of 107.2
  5. Fan (UK −20 °C): 87.2 °C = 189.0 °F
  6. Very cool oven: meringues and slow drying, not baking.

Valid, invalid, and the difference between them

Edge case: −40 °F, and inputs the tool refuses

  1. −40 °F = (−40 − 32) × 5/9 = −40 °C — the one point where the scales meet
  2. Gas mark: none. 225 °F is the bottom of the dial, so no mark is invented.
  3. This is a valid conversion with a scope note, not an error.
  4. −500 °F is rejected: below absolute zero (−459.67 °F).
  5. 1,000,000,000 °F is rejected: 555,555,538 °C is past any oven.
  6. Both refusals name the limit rather than printing a silent zero.

“Set °C” is the exact conversion rounded to the nearest 10 °C, since that is how Celsius dials are marked. Fan °C applies the UK 20 °C reduction to it. Most domestic ovens stop near 300 °C.
